Ingredients
- 1 block tofu - medium to firm
- 2 Tbsp olive oil
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 2 medium tomatoes, diced
- 1 c. corn
- 1 - 15 oz. can black beans
- 2 Tbsp nutritional yeast
- 2 Tbsp Heritage Bee Co. TURMERIC Honey
- 1/2 tsp cumin
- 1/2 tsp. chilli powder
- 1/2 tsp. garlic powder
- 1/4 tsp onion powder
- 1 jalapeño (optional)
- Squeeze of lime
- Fresh cilantro or parsley
- Salt and pepper to taste
Method
- Drain and press tofu to get rid of excess water.
- Over low-medium heat, sautè onion until golden brown. About 5 mins.
- Add red peppers and tomatoes. Sautè until the liquid has evaporated.
- Crumble tofu into the sauce. Add corn, black beans, nutritional yeast, Turmeric Honey, and spice powders. Continue cooking for 10 mins.
- Add fresh cilantro or parsley to taste. Also add the jalepenõ if desired.
- Salt and pepper to taste.
- Squeeze fresh lime before serving.
- Serve with toast and avocado.
