Tofu Breakfast Scramble

Tofu Breakfast Scramble

Inspired by the flavours of Mexico, this protein-packed Tofu 'Revuelto' Scramble is a great alternative to eggs.  Serve with toast and avocado, or wrapped in a corn tortilla.  Olè !

Ingredients

  • 1 block tofu - medium to firm
  • 2 Tbsp olive oil
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 2 medium tomatoes, diced
  • 1 c. corn
  • 1 - 15 oz. can black beans
  • 2 Tbsp nutritional yeast
  • 2 Tbsp Heritage Bee Co. TURMERIC Honey
  • 1/2 tsp cumin
  • 1/2 tsp. chilli powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp onion powder
  • 1 jalapeño (optional)
  • Squeeze of lime
  • Fresh cilantro or parsley
  • Salt and pepper to taste

Method

  1. Drain and press tofu to get rid of excess water.
  2. Over low-medium heat, sautè onion until golden brown.  About 5 mins.
  3. Add red peppers and tomatoes.  Sautè until the liquid has evaporated.
  4. Crumble tofu into the sauce.  Add corn, black beans, nutritional yeast, Turmeric Honey, and spice powders. Continue cooking for 10 mins.
  5. Add fresh cilantro or parsley to taste.  Also add the jalepenõ if desired.
  6. Salt and pepper to taste.  
  7. Squeeze fresh lime before serving.  
  8. Serve with toast and avocado.
